
Zahnd (Münchenstein, Switzerland) recommends its z200 and EVO-4 knife grinding machines for use in butcher shops. Both models have a patented grinding unit for a soft, flexible and slightly crowned finish. According to the company, the machines grind knives very quickly and remove very little material during the grinding process. A suction device ensures a minimum of fine dust particles as well as hygienic blade sharpening.
The z200 model can also be used by inexperienced staff and guarantees easy operation with a perfect finish. The knife is guided through the grinder by magnets. The knife is also guided during the polishing process as well so that inexperienced users always have the ideal polishing angle. To replace the grinding disk, only three screws need to be removed, which can be done quickly and easily by hand, without tools.
The EVO-4 is a professional knife grinding machine meant for continuous use. It grinds any knife: filleting, boning, scoring, serrated or bread knives, cleavers and cutter blades – with continuous grinding angles from 24° to 48°.
