
Ferdinand Henneken GmbH (Bad Wünnenberg, Germany) has been producing meat processing equipment since 1977. Right from the start the focus of production was on vacuum tumblers. Brine mixers, tenderisers, injectors and loading systems were later added to the product range.
The company produces a range of tumbler models for both artisanal and industrial applications. Henneken recommends the CVM, a machine with the biggest range of options for application, available in the sizes 150 l, 250 l and 350 l. All three sizes are available with a double cooling jacket. This ensures the same uniform production conditions as for the industrial machines. With the rotating arm and various interchangeable mixer tools, the CVM enables tumbling, marinating, dry seasoning, mixing and portioning of various products.
The entry level product for industrial tumblers in the B range is the B1 vacuum tumbler which is suitable for a batch size from 100 to 260 kg. The B type vacuum tumbler is produced with a drum volume of 12,000 L and in the small sizes can also be adapted to the needs of the customer using various options. This includes swing-away covers, weighing, cooling and thawing systems, brine dosing systems, special fin constructions as well as various loading systems.
The special feature of the B series is the diagonal fins that enable 3D tumbling. The meat is not only moved in the direction of rotation but also from the front to the back and back again. This ensures very uniform mixing, high protein digestion as well as optimal and homogeneous tumbler output.
Among the curing injectors, the HPI 300 with 24 needles and 300 mm working width is the entry-level model that is used in artisanal businesses. The industrial models are available in working widths of 350, 450 and 650 mm with 50 to 630 needles. All models are characterised by a robust, easy to clean construction according to the manufacturer. The forced injection controlled by the retention plate enables highly accurate injection rates.
