
The secret to success lies in the spices
At the first Franconian bratwurst summit, the jury appointed Christian Pristownik (Lauf, Germany) as “King” in the “Traditional Bratwurst” category. A total of 16 butcher shops from throughout Franconia vied for the title in three categories.
34 types of bratwurst from 16 butcher shops were grilled for the circa 10,000 visitors to the First Franconian Bratwurst Summit in the Upper Franconian town of Pegnitz. But the bratwursts were not only barbecued to feed the hungry, but rigorously rated by a professional jury as well as the public in three categories: “Traditional Bratwurst”, “Creative Bratwurst” and “Audience Favorite”.
The jury chose the bratwurst from Metzgerei Pristownik (Lauf an der Pegnitz) as the best traditional bratwurst. In the blind taste test, taste was the only thing that mattered. The 30-year-old master butcher Christian Pristownik says that the reason for his success lies in the fact that he has always valued his customers’ opinions and continually works to improve the quality of his meat and ingredients. Chef Inge Pristownik explains that the family-owned company’s success with bratwurst is due to the spice mixture - which is of course a well protected secret: “Fundamentally, our attitude is that less is more” Above all, we don’t use any additives or flavor enhancers.”
Metzgerei Pristownik also ranked high in the creative category with its pizza bratwurst. In order to offer his customers variety throughout the entire barbecue season, Christian Pristownik constantly thinks up new bratwurst ideas.
He gets the ingredients for his meat creations from Beck Gewürze & Additive in Schnaittach. “When it comes to food quality, we always see eye to eye with Beck, which gives us the certainty we need in regard to our ingredients.” The Franconian company produces spices, spice mixtures and food additives.
