Frutarom Savory Solutions (Salzburg, Austria) will be presenting the starter culture Bitec Starter Mild & Fast, the additive Meatstab A10 for meat preparations, the new decorative seasoning Deco Quick Schwarte as well as a compound for vegan slices in addition to its natural cutter aid BIO Tex Pure.

BIO Tex Pure – a preparation for producing boiling sausages from the Nesse range of spice mills – will be new at IFFA. The mild aromatic mixture replaces citrate and phosphate with natural ingredients. It has good water binding properties, ensuring a stable structure and a firm bite and is completely free of E numbers.

In addition to their action as a ripening culture, starter cultures from the Bitec Starter B range are able to form antibacterial substances that are effective against L. monocytogenes among others. These bacteriocins disrupt the integrity of the membrane of the Listeria cells, leading to their death. The new Bitec Starter Mild & Fast is characterised by a particularly mild and harmonious fermentation aroma, even at low pH, according to the manufacturer. A high proportion of staphylococcus ensures there is very good colour development and colour retention. The possible applications are diverse, the manufacturer particularly recommends its use for firm raw sausage, all types of snack products, Mediterranean and fat-reduced applications as well as onion mettwurst. The new Meatstab A10 is a natural aroma extract for injection into meat preparations that is produced without E numbers. The preparation is impressive with its mild aroma and is suitable for pre-treating all types of meat as well as tumbling.

Meatstab A10 reduces shrinkage during roasting and guarantees a juicy end product, according to the manufacturer.

The new decorative seasoning Deco Quick Schwarte promises a crisp but very bite friendly rind with roasted crackling flavour for new meat variations in the hot food display. Even when sliced cold, these products do not have the rubbery texture associated with traditionally applied crackling but instead have a slight bite with an outstanding appearance.

The company will also be demonstrating at the IFFA how just a few components can be used to prepare hearty vegan cold cuts based on sunflower oil protein.
