
Gentle technology for frozen meat
Kilia (Neumünster, Germany) has developed breaker technology for automated processing of frozen meats. Various sizes of machines are available (processing from 1 t/h up to 12 t/h), including individual devices (SP50/SP100/ SP150) as well as ones that are combined with a frozen meat grinder (TP160/TP200/TP220).
A conveyor feeds deep-frozen blocks of meat (at –30 °C) to the rotating breaker cylinders with wear-resistant breaker teeth developed especially for this purpose by the manufacturer. These guarantee gentle, quiet frozen meat crushing into pieces that are circa two times the size of a fist. In the TP-series frozen meat breaker, these can be processed further immediately; direct grinding through 2 mm perforated disks is completely unproblematic. Further transport to the downstream mixer or mixer-grinder is done via transport belts or screw conveyors. All of the company’s mixers and mixer-grinders can be bought with optional vacuum and refrigeration facilities and can control the entire production line via a recipe manager with software links to the whole system. If desired, a continuous cutter can be integrated in the line afterwards.
Alternatively, a production line can begin with the SP frozen meat breaker, which can then be combined with an automatic angle mincer suitable for processing frozen meat. www.kilia.com
