
In 1969 Baader (Lübeck, Germany) developed the press-separation process for the separation of meat from connective tissue and sinews, as well as for the separation of soft and hard components. This process is used for a number of applications, including the desinewing of pre-cut red meat, poultry and fish. “Baadering” guarantees gentle raw-material handling and the preservation of protein structure, which is essential for improving meat colour, increasing the swelling capacity of sausage meat and enhancing the appearance of the final product. According to the manufacturer, “Baadering” guarantees high-quality raw sausage products that are sinew-free. The meat produced by Baader machines is comparable to ground meat and is therefore not considered “separator meat”.
Baader has developed a dosing conveyor that enables customers to use the machine continuously to its full capacity. This conveyor is universally compatible with all hopper machines and can be used with a variety of input containers. For example, E2 meat crates, standard 200-l or 300-l meat trolleys or standard 600-l to 800-l boxes can be used for loading. When used in combination with a Baader machine, the dosing conveyor can be equipped with a metal detector. Furthermore, the Baader machine is able to “communicate” with the dosing conveyor. For example, if the machine signals that it is full, the conveyor will stop. The dosing conveyor comes with casters, which facilitate cleaning and offer great flexibility of use.
At IFFA the manufacturer will be exhibiting the high-performance Baader 605 with the new dosing conveyor, as well as the Baader 604 with a support chain and feeding system.
The exhibited products will also include its updated Baader 601 line. These machines are now equipped with a tamping device that makes it possible to process large pieces without mechanical pre-cutting. By using this device, one work step can be saved and a higher product quality can be obtained. This machine also comes with a jam and dry-run sensor.
At the Tipper Tie stand (C31/C41) in Hall 1.1, trade-fair visitors will have the opportunity to see a Baader 601 with lateral infeed conveyor in action.
According to Baader, all of these machines guarantee tangible improvements in product quality at a consistently high level with precise and repeatable production parameters. The company emphasises not only the granular, non-smearing quality of the sinew-free meat produced by its machines, but also by the huge time savings compared to the traditional method of removing sinews by hand.
