The microbiological safety of foods, particularly protection against listeria, plays a major role in the meat sector.
Scheid AG & Co. KG (Überherrn/Saar, Germany) has developed a special preparation that lowers the risk of listeria in meat processing. The functionality of the technological inhibitor Presal 550 R has been demonstrated both scientifically and in several challenge tests.
Listeria are highly resistant, ubiquitous bacteria that can reproduce at temperatures ranging from –2°C to +45°C. Listeria can also grow in atmospheres with oxygen as well as oxygen-free atmospheres. The microorganism is a particular hazard for infants, pregnant women, the elderly and the immunocompromised.
The use of Presal 550 R enables the risk to be minimised. The addition of just 4 g/kg has been shown to inhibit the growth of L. monocytogenes.
Along with the low quantity needed, this product has other advantages such as the lean declaration and improved colour stability, sensory optimisation and improved shelf life of the final product.
