
Reich Thermoprozesstechnik (Schechingen, Germany) presents a new series of its Kochmeister Hermetic steam-heated boiling kettles. The seamless, fully welded construction made of chromium-nickel steel ensures high stability, tightness and resistance to common foodstuffs. It ensures that no moisture or meat residue can get into the interior of the kettle – even during cleaning with high-pressure steam. Thanks to its special design, complex inspection doors and maintenance openings in the housing can be dispensed with. Full all-round insulation ensures minimal heat loss. The cooking kettle is heated with steam of from 6 to 8 bar via a highly durable steam jacket.
The cooking kettle’s components are user-friendly because they are accessible from the outside, including the new low-maintenance drain valve, also made of chrome nickel steel. The bottom of the inner boiler is designed to guarantee complete emptying. Water is supplied via a large inlet controlled by an electric valve. The insulating lid is equipped with a high-quality silicone seal and safety handle. An automatic, pneumatic lid opening is optionally available.
The Unicontrol 100 microprocessor control rounds off the professional features of the Kochmeister Hermetic series. This controller, which is built into a separate, water-protected stainless-steel housing, enables all common working methods with pre-selection and working time, water and core temperature as well as Delta-T cooking. A digital display provides all relevant set-points and actual values.
