Grinding right before filling
Circa forty years ago, Risco (Schorndorf, Germany) began producing meat grinders for Italian raw sausage manufacturers. This experience was of great benefit when the company began developing its filler-grinders. The new attachment integrated into its vacuum fillers grinds raw and boiling sausage materials immediately before the filling process. This enables optimal adaptation of the product appearance through the independent cutting speed and various blade set combinations, regardless of the ejection speed of the vacuum filler. Grinding, portioning, tying and clipping can thus be completed in a single operation.
Risco also offers a broad range of paddle mixers for the food industry. These are used to mix such foods as meat, sausage mixture, ground meat and deli salads with meat, sausage, fish and vegetables. The machines with their interlocking paddle mixer shafts guarantee gentle, even mixing, according to the manufacturer. Depending on the application, these mixers can be equipped with temperature display, scale, vacuum system, direct steam, CO2 or nitrogen cooling system and a double casing.
