The traditional company Hans Kupfer und Sohn has long produced its renowned products using the extensive assortment of Schröter smoking systems. In 2006, a major fire almost completely destroyed the company’s production rooms at its headquarters in Heilsbronn, Germany. It didn’t take long, however, for Hans Kupfer und Sohn to decide on cooperating again with the Schröter company. Within only 18 months, the two companies accomplished rapid and solid restoration of the destroyed facilities. Kupfer und Sohn could once again begin producing its fine sausages in December 2007. Of special importance in the new plant, with its production area of over 25,000 m2, is the CLIMAjet fermentation, ripening and post-ripening systems as well as the SEMIjet program.

Kupfer uses the CLIMAjets for its new assortment of salamis that includes “Schlotengels” and “Pfefferbeissers”. Consumers are especially fond of the company’s “Salametti” with white edible mold. Last, but not least, Kupfer uses this equipment to produce its palette of raw sausages in the popular sliced meat packages. The CLIMAjet has clear advantages. Because it enables gram-true sausage manufacture, precise declared weights can be made on packages, enabling optimal compliance with weights and measures laws. In addition, the sausage specialist profits doubly in regard to exhaust-air cleaning. For one, it can adhere to the legal requirements of TA Luft; for another, the combined heat recovery system enables valuable energy to be saved because heat recovery warms the heat transfer oil which then heats the baking equipment.

The semi-continuous SEMIjets are used for liver loaves, all types of small sausages as well as for the company’s cooked ham products. A special feature is the complete separation of raw and cooked foods. Because the equipment automatically transports the products, employees must no longer push the wagons into the individual areas themselves, which eliminates the possibility of germ-introduction or cross-contamination.
